So, yes. No miso soup yesterday. Moving on….
Today I decided to make a really hearty miso soup for dinner. I set the potatoes and carrots to boiling and used that time to take out the trash. Where I ran into a neighbor. Who wanted to chat. An elderly neighbor who was out for the first time in awhile and recovering from pneumonia. We chatted. Her cat even came over to chat. Meanwhile, back on the stove….
Good thing I hadn’t put in any of the faster-cooking ingredients, but in they went since the potatoes and carrots were quite certainly tender enough. And then the doorbell rang.
Today’s miso soup: Let’s just say it was a well-cooked bit of a mush of potatoes, carrots, cabbage, tofu, and scallions. Yummy! I used a mix of red and white miso this time. Super-yummy!
